Trying to replace a guitar realtrack with another one but BIAB keeps defaulting back to the guitar rt in the style chosen. How do you turn this off?

Did you freeze the first one? If so, you have to "unfreeze" it before changing it.

Which RealTrack are you trying to change to, and what tempo is your song?

By default, if you select a RealTrack that's too fast or slow for your song, BIAB will automatically switch to one that's at the correct tempo. I'm guessing that's what's happening.

Some of the earlier styles force a certain RealTrack. If that's the case here, try removing the one track and save your new custom style as a different name. Then add the new RealTrack.
