I was wondering if it was possible to add hits into the fake sheet that I created?
I'm going from an afro-cuban 6/8 to a 4/4 R&B feel. Really would love to know how to change the time signature in the middle of a tune as well.

Welcome to the BIAB forum! For changing the beats per bar, select the bar you want the change to occur at, the press "fn"+ "F5" together. This will bring up the "edit bar settings" page, where you can select such parameters as tempo, beats per bar, style, etc. The changes you make at this bar will stay in effect in the song until you change them back at some future bar (by, again, opening the "edit bar settings" window).

By "hits", I expect you're referring to what BIAB calls "shots". To do this, at the bar where you want it to occur, type in your chord followed by two periods ("C7.." for instance). At the next bar, if you want the music to resume, just enter a regular chord again ("C7" for instance).
