How can I create 6/8 time arpeggio background?

There are several songs that have an arpeggio background throughout such as Elvis Presley's "Fools Rush In" or the Christmas classic "O Holy Night". These are in 6/8. How is this created in real tracks or can it be. Creating 6/8 time is one trick I need to learn and then how to create it with an arpeggio (either guitar or piano). Using BB 2019.
I'm quite new to the software and struggling to figure a lot of it out. Haven't found any such tutorials yet.
