I want to copy a track from Guitar to Piano but the event list has a ton of pitch bend in there. Is there a way to edit those out in one swoop rather than deleting/adjusting each instance of it or any other event controller. Also what effect does the channel assignment have in the event list different from the channel assigned to the track itself.

When you highlight the track using Ctrl-A, and copy the notes using Ctrl-C, a window called "Copy" will appear. If you check "Use Data Filter" before clicking OK, you can choose exactly what you want to copy. Uncheck "Bend", and all the pitch bends will be skipped.

Ideally, any MIDI events on a track will be on the same channel as the track itself. Is that not the case?

It's possible to force tracks to use a MIDI channel that is different than the events .. it's a feature that can be used or not.
