The only 'Enya layered choir' I have found is in Omnisphere, but it is a darned expensive synth.

Not quite what you are after but
Native Instruments Session Strings includes several Pizzicato, Staccato and Spiccato sampled sounds There's a
Video on You Tube, although it doesn't strongly demonstrate those features. This video might demonstrate the Pizzicato slightly better.
For the layered vocal sound, plan on using tens, maybe hundreds of tracks. Why? Read this from Enya:
