I want to put a 1 or second gap, at the start, before the count in.
The reason, is that my the time I press play, it doesn't give me enough time to pick up my plectrum, and prepare myself to play.

Don't think that is possible. But you could go with a midi footswitch so you and keep you hands on your instrument. This has been a popular topic in the forum over the years so a search should turn up a process description. Good Luck.

I have a full 2 measures of count in. Plenty of time to pick up the pick, take a swallow of my beverage.....and be there for the start

Be sure you have enabled the count in for 2 bars. You get clicks on 1,.. 2,.. 1,2,3,4...song starts on beat 1 in measure 3 unless there's a pickup on guitar, steel, or fiddle leading in to bar 3.
