Didn't watch the video but I imagine many forum members use, or used the same method I did, starting with listening.
I listen to the song with guitar or bass in hand. I start running up the neck on the bass string to determine the key signature. Sometimes I have to tune the bass string higher or lower in pitch to match up to a key.
Once I find the key signature I'll either follow along on the bass strings to learn the chord progression or jump right into the deep end of the pool and start playing chords while guessing at the progression.
One or two runs through the song and it's done.
It's a lot more work to transcribe lyrics.

Yep....that's the way I've done since the late seventies. Of course, one would still have to have a reasonable ear for this approach. BUT an easier way is to google/bing song title + chords. I can usually find a version on line and from there I determine if those chords are correct by comparing them to the actual recorded chords.
Me, it's not about how many times you fail, it's about how many times you get back up.
Cop, that's not how field sobriety tests work.

I've used this site on occasion: https://www.ultimate-guitar.com/But...if it's a song I really want to do accurately I go to: https://www.sheetmusicplus.com/....and I happily pay the (3) buckaroos....then I'm good. I've got about 1/2 dozen or so songs from them....easy process. Back to it.....

yep....
However, you have to have the guitar tuned to the same standard as the record or you are up the proverbial creek so to speak.
Back in the early 60's the tuning used by bands was literally all over the place. No one seemed to be using the same reference tone to tune. It might have depended on the studio and the piano they had that was either used to tune the guitars too or was used in the song.
I remember having to retune my guitar for certain records to be played in tune with my guitar. So when I bought my first turntable, I spent the money and bought one with a variable speed drive. The salesman looks at me and says "Guitar player, huh?"
Now days....everyone is using those little electronic tuners and practically every song is now tuned to A-440.
But yep..... played by ear and picked out the chords.
But.... I'll go one step further. We ( the guys in one of the bands I was in) used to set around listening to songs we didn't know....and try to figure out the keys and chords by just listening. Not using perfect or absolute pitch, but by listening to the color and texture of the chords. Once you do this a few times with songs you know..... it actually becomes quite easy to do.
