I am writing a theme song for a sporting team. The music is done I want to get a vocal chorus/chant effect that a lot of theme songs have. Bit like how it would be sung in a locker room. Does anyone have tips or experience on how to achieve this? Also, could it possibly be done with an AI voice generator?

Yes, of course it's possible.
Sometimes you only need 3-4 voices to get the effect across.
If it were me, I'd just ask some friends, even if you have to do a very primitive recording (not in the studio), just having that real time effect makes more of a difference.
It may sound corny on its own, but in a mix it may work.
Effects that may help afterwards:
Delay
Reverb
Chorus
.. but any of these is vastly improved just by having multiple voices as the source to start with
I do not work here, but the benefits are still awesome
Make your sound your own!

Yea, you don't want to use AI here. A few voices in the right setting—say, a real locker room—can be doubled, tripled, slightly time/pitch shifted to get just the right effect.
