I like entering chords in BIAB using my MIDI keyboard (as well as typing them in). My MIDI controller triggers a specific channel in BIAB and I usually pick either Piano or Electric piano. There are several versions I can use, but they are all GM2 sounds.
I have several Rhodes and Whurlitzer VST and VST3 plugins (as well as Hammond, etc, but I prefer Piano sounds for composing).
I don't even know if this is possible, but since the GM2 Epiano sound is so uninteresting, if I could trigger one of those VST EPianos with my MIDI keyboard it would make the process better for me. I just don't know if it's possible and if it is, how it's done.
Conversely, what GM2 plugin should I buy/Download, etc. to get better piano sounds?
It is possible. Assign the desired synth to that track. BiaB supports VST, VST2 & VST3 synths now .. hopefully someone can point to detailed instructions

As far as plugins/VSTi for piano.... There's a lot of options. One of the ones I have is the Waves Rhapsody piano. It's not very expensive ($40) compared to some of the piano VSTi on the market. In addition, they almost always have a "B2G1" deal where you can grab 2 plugs and get a third one for free. they have some really nice plugins.
You can also find some fairly decent free ones on some of the sites that sell the better pianos. Just do a google search.
