An oddball query. I've successfully created loads of practice songs in different keys.
Lately, I've noticed a kind of default error where the key in both some new and existing songs changes without my resetting it? It's almost like my default isn't Concert C and BIAB think it's a horn so maybe home key is Eb or Bb? If I try to change the top bar all the chords naturally change again.
I'm trying to fathom how this occurred, whether I changed anything but this is a minefield, so your advice & suggestions are most welcome.

It sounds like you have, at some point in time, engaged visual transpose. Follow the 1, 2, 3 on the image below and select "No Transpose". If this is not the problem, then Returning to Factory Settings (RTFS) will, most likely, solve the problem. The RTFS option is found under the "Options" menu. The image below uses the Standard View in BIAB. We now have the visual indicator when a transposition is in effect (something I suggested after being burned too many times). Where the key signature is shown (default of C), there may be a little plus or minus, and a number.

I play, and write for, instruments in many keys. Long ago I decided to always work in concert pitch and save my songs that way. Amen to that. When I need to make changes to pitch of an entire track, I do it in TwistedWave down to 1 cent (100th half step) and if I need, also change the length to the 100th/second.
