Is there any keyboard shortcut, or other ways, to control the Master volume or individual track volumes - rather than using the mouse to drag the volume sliders?.

I think the ones you're looking for are:

Ctrl+Shift+Q / W
Decrease/increase current track’s volume by 5.

Ctrl+Shift+E / R
Decrease/increase current track’s panning by 5.

Ctrl+Shift+T / Y
Decrease/increase current track’s reverb by 5.

Ctrl+Alt+Shift+R
Set current track’s volume.

Ctrl+Alt+A
Decrease master volume by 5.

Ctrl+Alt+S
Increase master volume by 5.

Ctrl+Alt+D
Set master volume.

Ctrl+Alt+Shift+Q
Reduce all tracks’ volumes by 5.

Ctrl+Alt+Shift+W
Increase all tracks’ volumes by 5.

Ctrl+Alt+Shift+E
Set all tracks’ volumes.

I noticed from your past posts that you use Band-in-a-Box for Mac so I'm assuming your question is Band-in-a-Box and not RealBand that is only on the Windows platform.

Here's Mac specific details:

control+shift+Q: Decrease the current track’s volume by 5.

control+shift+W: Increase the current track’s volume by 5.

control+shift+E: Decrease the current track’s panning by 5.

control+shift+R: Increase the current track’s panning by 5.

control+shift+T: Decrease the current track’s reverb by 5.

control+shift+Y: Increase the current track’s reverb by 5.

control+option+shift+R: Set the current track’s volume.

control+command+A: Decrease master volume by 5.

control+command+S: Increase master volume by 5.

control+command+V: Set master volume.

control+shift+command+Q: Decrease all tracks’ volumes by 5.

control+shift+command+W: Increase all tracks’ volumes by 5.

control+shift+command+E: Set all tracks’ volumes.
