In my BIAB songs I notice I can set volume from 0 to 127. What units are these? 0 to 127 what?

Simplistically: My guess is that this is really a signed byte - a computer number - that effectively represents 0 to 100 volume% (Computers don't work internally using a decimal numbering system, they use Bits and Bytes)

It's a holdover from the binary number system, that's all. 127 is loudest, 0 is off, and everything else is in between. That's 128 possible values, or 2 to the seventh power. 90 is the normal (default) value in BIAB.

Think of it as
0 = 0%
63 = 50%
127 = 100% output

Remember also that the human ear perceives loudness on a logarithmic, not linear scale, so without complicating things too much, don't get Volume confused with Sound Levels. I'm not sure what BiaB does internally to scale this, but increasing the volume from 50% to 100% might not be twice as loud. Best thing for you is to just increase / decrease to suit your own desired levels.

A little clarification:
The Logarithmic hearing scale means that 60dB is twice as loud as 50 db. 70dB is twice as loud as 60dB, etc.

Each 10dB the sound level doubles

Another way to describe: If you increase the sound power by 10 times, the human ear perceives that the loudness has increased by a factor of only about two times.

(At any rate, I hope this digression was worthwhile)

Most DAWs - and BiaB also - use the MIDI cc7 Volume command for this on Audio Tracks just the same as was used historically for MIDI Tracks.

"0 - 127" is the Standard MIDI range for these commands, where 0 is no volume at all and 127 is the highest you can go.

Since different Audio (or MIDI) tracks can inherently have differing levels as to what the actual amplitude of whatever the particular sound is, we can't at that point know for certain what the SPL or dB reference for each track should be, but we do have the VU meters to see when it is playing back, which should easily allow us to compare that to the current Vol number setting in the Mixer and make a reasonable estimate of what the correspondence between the two can be for each track.

My amp knob only goes to 10, man if I could get it to go to 127 mmmmmmmh.
