The BigPiano shows green (or yellow) on the correct key when I play from my MIDI instrument. I can right click "Thru" and change the patch, but the volume is very low when I play.
Also, I got a pop-up saying "The MIDI THRU part played by your MIDI keyboard will now use the MIDI Driver DURING PLAYBACK (not a Dxi synth)" every time open up Option --> MIDI/AudioDriver Setup.
Any way that I can make the MIDI THRU in Band-in-a-box louder?
TIA.

In addition to the advice from VideoTrack, you can click on "Options" along the top line in BIAB, then select "preferences", then select "MIDI Options". On that screen, on the left side, you'll find "Boost Thru Velocity by..".
By increasing this, you'll increase the velocity curve going to the external device. While that's not exactly volume, a slight boost here may help you. If you boost it too far, you may cause unintended changes in the external synth sound. If that's the case, just dial it back.
Thank you VideoTrack for the clear instructions, I'm able to see the Thru track in the Mixer now.
Interesting thing is, my old desktop crashed this morning and I'm on an I7 laptop which does not allow me to change the patch of the Thru tack anymore. When I right-click on the Thru track and use "Select MIDI Instrument" to change the patch, the patch of Thru track stays on Acoustic Piano. If I right-click Thru and select "Mute", it mutes the track that currently selected, and I'm not able to select the Thru track.
The only other thought I can think of is to check if your MIDI controller has some velocity curve settings. Many do. Perhaps a different velocity curve will work better for you.
Reinstalled Windows and BIAB on my desktop computer, able to change patch by right-click Thru and choose "Select MIDI Instrument (patch)", but can only use "General MID Patches", which none of the patches sounds good.
By lower the volumes of all other tracks and bring up the master volume, I am able to make the MIDI track audiable, but there's a noticiable delay when I play notes from the MIDI controller.

I little more information about your system would help, things like what is our audio interface (soundcard) and what MIDI sound sources do you have.
None of the patches sound good because you are using the included GM patches and most all of them don't sound very good IMHO. So you will need better patches. If you want/need to stay in GM then get a soundfont (SF2) player and some free soundfonts:
Note that both of these are entry level versions and if you like either one you may want to purchase the pro version. I have the pro version of Kontakt and it is my go to platform for excellent sounds. You can purchase excellent third party sounds for the Kontakt Player just be sure to make sure the docs say it is for the player version. Also note that these are not GM so you will have to learn how to assign each patch, but that is very easy to do.
The noticeable delay you are experiencing is called latency. If you do not have an audio interface that uses ASIO drivers then you have a very high chance of experiencing latency. You did not list an audio interface so I am assuming you are using the motherboard included interface, probably a RealTek. It is good for listening but terrible for recording. You may need to purchase a good audio interface. Focusrite is very popular in these forums.
PS - how do you like the Roland AE-01? I have an Akai EWI-USB. I can easily set up any Kontakt patch to use it. The same is true with any CC2 wind controller.
I just posted a selfie and all of the responses were get well soon!

Thank you Mario, that's lots of information for me to digest.
One of my issue is "The MIDI THRU part played by your MIDI keyboard will now use the MIDI Driver DURING PLAYBACK (not a Dxi synth)", which prevent me from using any plugin, correct?
I bought AE-01 because nobody has EWI USB in stock with a reasonable price. AE-01 does not have sensor on the mouthpiece so there's really not much I can do with it.

I don't know the answer to your question as I do all of my recording in my DAW. I only use BiaB to determine my chord structure and style.
I would try to duplicate your problem with my EWI-USB in BiaB but I am going to have oral surgery in an hour so I will not be able to help as soon as I would like. In a day or two I might be able to use my MIDI keyboard controller in no one else has helped you by then.

Handy flash drive tip: Always try plugging in a USB device the wrong way first? If your flash drive (or other USB plug) doesn't have a symbol to indicate which way is up, look for the side with a seam on the metal connector (it only has a line across one side) - that's the side that either faces down or to the left, depending on your port placement.
