How do you set the count in when you want to record at any point in the song that is not the beginning? I don't see any.

Band-in-a-Box count-ins occur at the beginning of a song. BiaB has no built-in "recording a punch-in setting".
You might consider making a wishlist request.

Jim is correct. The only way to achieve that now is to open the BiaB song in a DAW and do your recording there. I have Studio One Pro 7 and I know this works there. If you have a Windows system you have RealBand, a DAW that will open BiaB song natively, thus you do not have to drag and drop. I don't use RealBand so I am assuming it will work there also; others will have to comment on that.
I don't record in BiaB but I see how it can be useful for those who do so if you put it on the wishlist I will give it a +1.
{edit} - Maybe a work around would be to repeat the count-in on measures 1 and 2 via the drum fills, record your part(s), then have no count-in selected for your song. It might be worth trying if you want to record in BiaB.

That's shocking. 30 years later, still no count in for punch in recording. Absolutely incredible.

Moving your BiaB tracks to a DAW and recording there would be my recommendation. That's what most of us do. BiaB is EXCELLENT at exporting tracks for that purpose.
BiaB development has not (to date) been focused on providing full DAW functionality. I don't expect this to change in the next 30 years either.
You may want to look at RealBand, PGMusic's more DAW-like product, which is free with BiaB. I don't use it, but there are some folks here that are very happy with using it to record. There is a separate RealBand sub-forum where they hang out.
