I have version 10 of BIAB, and I've had this maddening problem for years.
Using the ZZJAZWAL style, for example, I'll set the melody instrument to Acoustic Piano, and record a chorus. When I play it back, it switches the melody instrument to Vibes.
How can I prevent that?

Version 10 is many years ago, but I'll try.
First, when you change the patch for the melody instrument, do a File, Save With Patches & Harmony and - Here's the Tip - make sure to do this command while the song is still playing.
Second, some styles have patch changes built in. If the tip above does not work, then you will need to go to Options, Preferences and find the MIDI option menu for version 10 that says something like Allow Style Patch Changes, and uncheck that checkbox.
There is also a Global Override preference for this in later versions, but I'm pretty sure version 10 did not have that.

This issue is ticking me off as well. I thought that it was just limited to styles with real tracks, but I had the problem today. I really appreciate the tip on how to change this. However, the vibes are always what I'm trying to get. Who would want some stupid trumpet sound? Ooops! Forgot to mention that I'm a trumpet player.

Sometimes there is a hidden midi command in the file that dictates what instrument comes in.
I have picked up 3rd party songs that require a manual edit of the midi in the lead in bars or first bar in order to override it.
On the other hand you should be able to make a change at a bar and have it stick.
Using the Save with Patches and harmony you have to hit the button to load the patches first, then once the numbers are in the boxes for melody etc. do the save.

John has a very useful tip. Over the years, there have been many 'Why can't I' posts here, where it turns out someone is working with an imported MIDI file with embedded patch changes.

Handy flash drive tip: Always try plugging in a USB device the wrong way first? If your flash drive (or other USB plug) doesn't have a symbol to indicate which way is up, look for the side with a seam on the metal connector (it only has a line across one side) - that's the side that either faces down or to the left, depending on your port placement.
