I was thinking that Big Piano would work, but I'd like to enter notes manually as the track is playing. Not worried about pitches, but I'd like press a key as the track plays, getting the correct rhythms for the melody track, and then editing the pitches after the fact.

Yes. Record your rhythm presses to the Melody or Soloist track. Edit the pitches later. You can use a MIDI keyboard if you have one, or even a computer key like the space bar. [EDIT: not the spacebar: see the post below from AudioTrack for instructions.]

How do get that to happen? I don't have a midi keyboard. If the track is playing, doesn't spacebar stop the track?

From the integrated Help: Record MIDI with the Playalong WIzard Feature
This is a very helpful feature if you don’t have a MIDI keyboard but you want to record with a "live" feel. Use the Wizard to record notes from the computer’s QWERTY keyboard for a track that’s more natural than step time. Here’s how it works.
1. Click on the [MIDI] toolbar button and check the MIDI Keyboard Enabled menu item.
2. Press Ctrl+R keys to record.
3. As the song plays, play the melody on any keys on the bottom two rows of the QWERTY keyboard, in the rhythm of the melody. The "wizard" notes won’t be the correct melody of course, but don’t worry about that as you record. When you’re finished, look in the Notation window. You will see the wrong notes in the right places with the correct durations.

4. Drag the notes (with the left mouse button) to the correct place on the staff. You will hear the notes play as you drag them, and the names will show in the note name box. For sharps, flats, and naturals, hold down the Shift key, Ctrl key, or Alt key respectively. You will end up with a melody that sounds like it was recorded live, without the rigid feel of tracks entered in step time.
[Tip: If you have the Wizard "On" the spacebar won’t stop playback. You need to press the Esc key to stop playback when the Wizard is on. This is to prevent stopping the song if you mistakenly hit the spacebar while playing the Wizard.]

Thanks for the correct instructions! It’s been well over twenty years since I tried doing this.
Yes, the spacebar key is the wrong answer. I use the spacebar on another program I do use frequently, called TapTempo.

To be honest, I've never actually used this function. I've definitely entered notation manually many times, but only for the purposes of creating printable scores. If I played them back they would most probably sound incredibly rigid. But it is a great way to enter a score when knowing the pitch is easier than knowing where to enter the exact note timing positions.

For editing the notes (i.e. changing the pitch) after you record them, there is a faster way, just use the arrow up/down to change pitch and arrow right/left to highlight the next note. Here are the hotkeys available:
N Enter a note at the current time line. M Add a note a third above the current note on the time line. R Enter a rest at the current time line. Up Cursor Change the pitch of the highlighted note by 1 semitone up. Down Cursor Change the pitch of the highlighted note by 1 semitone down. Right Cursor Move the time line forward. Left Cursor Move the time line backward. Shift+L/R Cursor Highlight the current note on the time line. Ctrl+Alt+Right Cursor Change the time of the highlighted note by +5 ticks. Ctrl+Alt+Left Cursor Change the time of the highlighted note by--5 ticks.

Ember, I've seen that list a long time ago. But the commands Andrew just gave, I don't recall ever seeing.
Is Ctrl+T still the same after 2018?

Handy flash drive tip: Always try plugging in a USB device the wrong way first? If your flash drive (or other USB plug) doesn't have a symbol to indicate which way is up, look for the side with a seam on the metal connector (it only has a line across one side) - that's the side that either faces down or to the left, depending on your port placement.
