Let’s start with the easy one, your last comment. You are referring to looping, which can be turned off.
Can you give an example of touching the screen during a performance that causes a problem?
Can you give a specific example of what you cannot do with a tag? BIAB can specify the number of choruses (all the way through the main tune; the jazz definition) and then where a jump to a coda (tag) occurs. I can do most jazz fakebook tunes this way. For a song with an odd song form, many of us just do one long song. You can block copy sections. The catch is a limit of 255 measures. There is also a song form function where you can do things like AAABAC etc.

I was going to answer in the same vein, the AABA conductor is a useful crutch for those who don't know the DIRECTION functions (CODA, segno, D.S. and 1.2 volta)

On that last item, I guess you're referring to BiaB playing the whole song over again from the beginning. That can be stopped. Click on the Loop icon and select "NEVER Loop Entire Song".
FWIW, I've long found the first/second endings fruatrating. What I usually do is go to Edit->Song Form->Settings for this song and check the box, lower left, that says "start the ending 2 bars early", then use the last two bars of the song for the turnaround and put the non-turnaround bars and any further tag after the song. This certainly doesn't deal with every case, but I find I can make it work with most.
The other technique people use is to just use "one big chorus", but that's impractical if one wants to change the number of choruses at short notice for, e.g., an extra solo.

It's worth a mention that many, perhaps most, people create a backing track .mp3 or ,wav, rather than run BiaB live, as there are fewer things to go wrong and a smaller risk of surprises. That said, there certainly are a number of people who regularly use BiaB live and for jazz, where things sometimes change late, BiaB has good flexibility.
BiaB also has the 'Conductor' feature, though personally I didn't really get on with it. Maybe I need more practice. (I'm not sure it's really intended for jazz).

I am running band in a box 2020. I have looked and tried but I cannot find a way to turn looping off. Maybe that feature was added later?

Don't know where looping is on BIAB 2020 but its always been possible to turn it off and I gp back to when BIAB was on floppies. Dig around but someone may be able to help.
The 2020 Band-in-a-Box manual shows the looping icon is in the Transport bar of the Normal view. The same icon is available under the Tracks tab of the Minimal view.

So I finally (after several hours) found the setting to turn off the loop after finishing the choruses. It is in the song form settingsl...there is a checkbox in the lower left corner, unchecking that box will prevent the software from automatically starting the tune again.
ugh. Finally.
I also managed to enable the proper endings with either codas or adding a repeat manually after the choruses. somewhat clunky but it works.

It took me a while to find that. Edit->Song Form->Settings for this sont->[Title Chorus]
I think that controls looping for only "this song". Probably that's fine though it certainly is rather burried. The Loop button affects overall looping for all songs, so you don't have to uncheck it for every song.
I'm not sure why you couldn't find it, though Jim's first image may have distracted you. Just click on the highlkighted icon on his second image or on the icon on the image I posted (you'll have to click my image to see it large enough) and select the option "NEVER Loop Entire Song". That turns overall song looping off completely for all songs. It doesn't stop repeats and endings.
