Trying to answer my own question, I think that Music XML does not support patch info. I can't find it anywhere in the Music XML tutorial. Take a look yourself: http://www.musicxml.com/tutorial/

This makes some sense, I guess. Music XML doesn't even have a default tempo. All velocities default to 90. Pretty simplistic. Unless the patch info used GM patches, there would be no guarantee the receiving software would make any sound at all.

Hope this isn't more info than you expected. I do find the topic interesting, and BIAB does support many Music XML functions, both reading and writing. It's an important step forward, but it's still developing.
