The Big Piano and other pianos in BB are simply visual representations of any MIDI data being played. When BIAB pauses playing, it sends an "all notes off" message. To get the Big Piano to continue to hold those notes without any audio playing might not be possible without having BB hold all the notes when you pause it, which would be very undesirable.

well, then how about keeping the notes played but automatically muting the volume (or automatically setting the volume to 1, or the like), when the song is being paused?
