I can enable and open the Default Synth - VSTSynthFont64. Then I can assign any midi channel without any issues. Can you show me a picture or what goes wrong?

The same happens via the "MIDI socket" icon.

[MIDI socket]->MIDI/Audio Driver Setup->Use VSTi/DXi synth->[VSTi/DXi Synth (CoyoteWT)->VSTSynthFont64->[OK]

The instruments dialog appears as shown in your screenshot.

If I click on a sound source file button->Open File, the file dialogue opens, partially behind the instruments dialog. The instruments dialog is unmovable. I can select a soundfont to use and/or just close and again I can move the Instruments dialog.

If on the Instruments dialog I click [Options], the Options dialog open obscured behind the now again immovable Instruments dialog.

I think there's a likely a simle workaround to that, by moving the Instruments dialog aside before clicking [Options]. I'm just about to try that to complete some image captures.

Edit: This skips a couple of intermediate file->open type actions that should be clear when following. We have to open, e.g., the VSTSynthFont64 synthesiser and, e.g., the JJazzLab.sf2 sound font.
