I have read before about guitar to midi interfaces but I can't find the post now. Can someone tell me of an interface that works well with different kinds of samples?

Roland GI-20, which is a straight interface, or an Axon AX 100 Mk II, which comprises an interface and synth and packs some amazing and unique capabilities besides. You also need a so-called MIDI or divided pickup such as the Roland GK-3 (there are others) or a synth-ready guitar. Google "MIDI guitar" and "pitch to MIDI" for other results, but be careful. There is a lot of dated information out there, and some interesting new stuff, too. R.

Perhaps I did not understand your original question. The StealthPlug will afford you amp and effect emulation* (digital simulation), as will numerous hardware devices such as those by Roland/Boss, Behringer, and Line 6, but will not play samples in the sense that I understand it. From Wikipedia: Quote:

This is typically done with a sampler, which can be a piece of hardware or a computer program on a digital computer. Sampling is also possible with tape loops or with vinyl records on a phonograph.
If emulation is all you are looking for, IK makes fine product; the only question is whether latency is low enough to be usable for your purposes.
If I did not already own the Roland VG-88 "V-Guitar" and were looking for emulation, I would get the Behringer V-Amp and FCB1010 MIDI Footcontroller. A friend of mine owns this combination. It is a powerful and cost-effective system which will work with any guitar.
If you are truly looking to play samples in realtime, the only practical way I know of is through hardware as noted in my previous post.

That was what I was confused about. So what I think I need is an emulator then. One more question. I may be wording this question wrong but are these emulators or their programs that they come with capable of producing a midi format in note form which can be manipulated by dragging the notes with a mouse?

What I am looking for is an interface that will hook up to a guitar and do the same thing that a midi controller does between a digital piano and a computer. Where the guitar can be made to sound like other instruments and notes corrected with the drag of a mouse. Is there any such animal?

What you need is what I described in my first post: A system comprising a divided, or "MIDI" pickup, a MIDI interface (technically, a pitch-to-MIDI converter, or PTMC), and an output device of some kind--a synth or sampler. With such a system you can play into a sequencer or DAW and have editable MIDI data as well as audio when you are through. Understand that audio and MIDI are two different data streams.
A company called Celemony is about to release a standalone program called Melodyne Editor, an audio-analysis utility which allows the user to edit audio recordings as if it were piano-roll data. You can do much more with this program, such as correct the pitch of a single instrument or voice line. Projected price is $349 in late summer of this year.
Money permitting, I would have a hardware guitar-synth rig, and Melodyne. But had I to make a choice, I would start with the hardware. Producing a quality result is not cheap. A used pickup and GI-20 interface run around $500 on ebay, and you still need a synth. The Axon AX 100 Mk II, an interface-synth combo, retails for $699, plus pickup. If you can find a Mk I (called simply the AX 100) it will run about half that. You MAY be able to find a synth-ready guitar for under $500. You can drive any synth with such an axe. Godin Guitars is the best-known manufacturer of these instruments, but a Roland GK-3 divided pickup can be added to any guitar, including acoustics. There is a bass version as well.
My Roland VG-88 uses a divided pickup but does not do PTM conversion and therefore will not drive a synth or produce MIDI output. It drives the guitar-amp-effect emulator only. (But does a HELL of a good job!) The combination ran me $525 on ebay. The newer Roland VG-99 comprises a PTMC, two guitar/FX emulators and processed guitar sound. Street price is around $1100. Requires a divided pickup.

That statement is in error. I should have said that you can run any synth with a Roland GK interface (aka "13-pin MIDI"), NOT any MIDI synth. The key words are "Roland Ready", "Synth Ready", or "Synth Access"®.
Casio and a few others made guitars (the instrument was mfd by Ibanez) with an actual MIDI output; these are treasured collectibles. Grab one if you find it.

Hey Rysard, can ya ditch the cat? LOL.
I never knewed someone from GA could make a wee R in a circle. I did know ya boiled peanuts but the 4 of us ate maybe 1 each and fed the rest to the wildlife. Must be an acquired taste.
I'm so allergic to cats that even the picture of one causes my chest to seize up. LOL
On the bright side I see someone near Alt lanta named a city after me, kinda cool.

Re: Soggy peanuts: It's a taste I han't acquired. I about choked the one time I tried the other local custom, which is dumping a pack a salted peanuts into a bottle of CoCola (local pronunciation) and drinking/eating therefrom.
I thought you had misread Conyers GA but I looked it up and, by golly, there is a Conley here. Will wonders etc.
Took me 10 years to learn how to mispronounce the name of the other main drag down here. (No, not Ru Paul.) The east-west route that isn't named Peachtree isn't pronounced "Ponssa day Lay-own", it's "Ponts da LEE-on".
