I'd like to put accompaniment (BIAB) in one window and allow others to join in separate window. Can this be done on Zoom? any other suggestions?

If you mean live in real time, no, not in Zoom; there is too much latency (delay).
Take a look at the app Acapella. If you have an iOS device and one person buys the pro version for a month, you can do extraordinary stuff by passing the tracks back and forth.

There are programs that claim they can override physics. I’m still skeptical.

There are always going to be problems with latency for any program - the problem is with the physical infrastructure rather than the software (which, as Matt says, ultimately comes down to physics!).

Doing live is almost impossible because of latency.
I have tried helping a relative to setup a 4 piece band live over "zoom", and it was very unstable. Perhaps there is something just for audio (without video), that is faster?

No. Same problem.
All these collaboration videos were filmed and recorded separately to a common track (or click track), then assembled together in sync by one person with video software.

I am currently taking guitar lessons online. The latency is so bad there is no way I can play along with my instructor. I don't mind because I am far enough along to be able to use BIAB for accompaniment. (I send him a couple of files each week and then he basis his next lesson on what I sent him.) I don't think this would work for a beginner student. I cannot even image what having more than 2 people in the virtual "room" attempting to play along with each other will be like.
