If I were to create a MIDI soloist track for, lets say, a Bb tenor sax, and wanted to print out the notation, is there any way to tell BiaB to print it as a tenor would need to read it - a step higher and in a different key than if a piano were playing the same note (Concert pitch)?

One way to do it is to set BIAB to a new key and tell it to transpose. Follow the diagram below. Make sure to select your key from the column on the left as this is the transposing column. The column on the right only changes the key signature and keeps the notes the same.
As you mentioned, the new key will need to be a tone higher.

P.S. I suggest saving your song with a new name, first. That way, should something unpredictable happen, you can always get back to the original versions before it was transposed.
Noel96's solution is good for transposing both the notation and the pitch of what is playing. But for transposing instruments like Bb Tenor Sax or Bb Clarinet, there is the Visual Transpose feature that makes it so the notation is visually transposed for these specific transposing instruments while keeping the same pitch. You'll find the Visual Transpose options under the Chord Display button. There are options for specific transposing instruments, or you could select the number of semitones up or down to transpose by.
If later on you are starting a new project that does not use transposing instruments, just remember to select the "No Transpose" option here to turn off visual transposition.

Thanks, Chantelle - that's pretty close to what I'm after. Is that just a global setting, or is there a way to associate that visual transposition with a particular track? Let's say I have Alto, Tenor, and Baritone sax tracks, and would like to view/print them without having to remember to do this step. Also is there a way to print multiple tracks at the same time - again, if I wanted printouts of the 3 sax parts printed on separate pages, but with one print command? I'm trying out using the soloist to generate "real jazz" solos for some players who are great sight readers but not improvisors :-)
