I have an acoustic piano plugin that I almost always want to enable when a MIDI or MIDI Supertrack is called up with Acoustic Piano as the sound. Is there a way to specify/map that a particular VST get loaded into the first plugin slot for that track?

For just one track one way is to use ALT+F2 to save a blank song file with patches and harmony. Insert your preferred plugin onto the piano track and use Alt+F2 to save the song file.
Then, when you have piano on your mind, load the saved song file.
I'm not sure how that fits my scenario. Here's one example:
- Load a MIDI style with an acoustic piano track. In the one I just loaded (MOVIN.STY), that track invokes the GM2 acoustic piano patch - My default General MIDI plugin is Cakewalk TTS-1, so that shows in the Plugins tab. - I'd like a way to tell BiaB that when I want to invoke the GM2 Acoustic Piano patch, it should load my Pianoteq plugin for that track.

Ya, that is not how it works. Your Pianoteq is a VST which has to be installed on the piano track. The Default midi synths (sounds) are .dll files which are installed in a different way. Now, I may be a bit wrong on all this, but it is something like this. The only way to default to a VST is as Jim instructed. I use VSTs for my piano in BIAB all the time. Works well. But I install on the track when I need them.
There are so many settings "nooks and crannies" in Biab, I was just hoping there might be one for doing this. I can't think of any case where I have an acoustic piano MIDI track where I wouldn't want PianoTeq, so just trying to save the fingers/mouse hand :-)
Pianoteq is a great piano VST. I'm using it for acoustic (mainly the Petrof 275), Rhodes, and just got the Vibes library. All very "natural" sounding.

If you use VstSynthFont as default you can set that midi channel to use the Pianoteq VSTi and save that as default. When loading a MidiSuperiorTrack you can save the Pianoteq group to Hi-Q 001 01 Piano, Acoustic, Grand Sforzando.tgs (just make backup copy first) you can save all the Hi-Q to Pianoteq presets.
