Eminor natural scale = E - F# - G - A - B - C - D - E
G major scale = G - A - B - C - D - E - F# - G
A dorian scale = A - B - C - D - E - F# - G

The difference really is the "tonality" (or home note) and the intervals between the notes. I don't do too much modal scales (I should, though) -- but played correctly, the A will "feel" like home in the A dorian scale (if that makes any sense).
