Simplest explanation I ever figgered to explain the theory behind it is this -

Look at the I-IV-V progression, and play it without adding any accidentals.

Em - Em Am Bm Em
Am (dorian) - Am D Em Am

Notice how in the second chord of Dorian there is a major chord?
In Em the seond chord is another minor chord ..

jamming over each using the 'same scale' will tell a lot about the differences.

It's not the notes you use; it's how you use them!
