I'm wondering if it's possible to put brackets around chords or notes in BB to show that they're optional -- like when they're only used for a turnaround to repeat from the beginning...

Since nobody offers any suggestions, you might try "Section Text". It will have the serious disadvantage of not using your proper chord font. But maybe you could figure something out that wouldn't look too awful.
Section Text is entered in the (Staff Roll) notation window. Right click where you want to put the text, and follow the menu.
I don't know of a better way to do what you want.

Biab generates its automagic via key and chord layout. You can "unfold" your song to play one time completely through all of your changes, start to finish. Remove or add your turn around when needed that way etc . . . It won't "skip" over any chords, that I am aware of?
There is an option to "add/find" chord subs when stuck between changes. It is listed under the "Windows" heading in Biab. Great way to add a turn around or walk up/down to the next chord.
