What I believe you'll find is that a 0 means that no particular MIDI channel has been selected. You are correct that MIDI channels are 1-16, so having a 0 midi channel will default to the first channel.

So, you would want to change the MIDI channel on that track.

Furthermore, if you're doing three tracks, the MIDI channel IN NO WAY needs to line up with the track number. So, if you're doing three tracks, you can use midi channels 8,13, and 2! The only real exception to that is that if you are using channel 10, for most synths that is an automatic selection of the drum channel, but that's not a hard and fast rule, either. You can put drums on any channel, and any instrument on channel 10. But, that's they way General MIDI maps it, and most files are written, and it's pretty much a standard.
