Click "option" then "preferences" then "countin/met" and choose any of the options for the count in feature. You can control what and when you want any or all instruments to play.

Re: no sound in 1st bar . . . I like to use the F5 and then mute any or all instruments in a bar I want silent, then use F5 again and click "return to normal" where I want the instruments to come back in. Also you may want to enter a chord followed by three periods (C...) where you want the beat to be silent.
