Those plugins simply may not have those mixer controls mapped to the same cc in the synths.

With the DAW I use, it can see all of the controllable parameters for any vst or vsti plugin once the plugin is instantiated in the software. You control them with envelopes, not mixer knobs.

It's quite possible there's a whole raft of controllable parms for those soft synths, but accessing them via the mixer controls is not the way that you go about it.

The 'standards' for midi are blurring with soft synths and modern DAW software. Like midi channel 10 being reserved for drums.
