Just thought I'd mention that I've had good success with some of the existing MIDI New Age styles. I tend to go for electronic sounds anyway, but if you voice them properly, i.e., use a good synth, some of the pianos, nylon-string guitars, harps, wooden flutes, etc., are quite convincing, especially when part of a mix.

As for orchestral sounds, I have had great success using Propellerhead Reason, half of whose soundset consists of such, in combination with BIAB. It's not easy; a lot of massage is required. Fortunately, Reason has a superb MIDI editor. For my part I wish they had more choral sounds, but instrumentally it's all there.

There are other threads going here about Garritan Personal Orchestra and other libraries of natural instrument sounds. Until PG comes across with exactly what you are requesting there's a lot you can do on your own with MIDI styles as a basis.
