The last one held more promise as it has a Mixer tab showing settings for both Playback (don't need, it works fine) and Record. The Record area shows sliders for Mic Volume Line Volume and Stereo Mix, with an enable radio button for each (only one can be enabled at a time).

That third option is the "Stereo Mix" I was talking about. Mic Volume is for the microphone input; Line Volume is for whatever is coming through the Line In connection on your sound card, and "stereo mix" is for recording whatever you are hearing through the speakers. When you want to record "what you hear", then select "stereo mix" on that record tab and give it a try.
