Not sure about the Piano Roll issue, but a couple of other ways ...

1. The Mixer panel. You can record mixer moves. So put the mixer in record mode and do your swell by moving the volume fader up/down as you desire.

2. Highlight the section of audio you want to work with. RT click, select Gain change. In the dialog select fade in. You can set the starting volume percentage and ending volume percentage.
