You can highlight all or any part of the track and then go to EDIT - CUT and use the DATA FILTER. Make sure you only have the CONTROL box checked. This will remove all continuous controllers for that section.
Alternatively, you can use the PIANO ROLL window to draw volume changes onto the track at any point.
