Makes perfect sense for a jazz gig where your performance is largely based on improvisation. When you think how Charlie Parker never played anything the same way twice.... for music that is playing behind a vocalist, it's probably better to have the structure of the song being the same every time.

Really does depend on your desired end result and what you are performing. You did say light jazz, so maybe the slight difference of BIAB regenerating every time would work for you. I'd say play with it in your home studio and let it regenerate 10 or so times (save each take) and see how much you can recognize the changes. It's mainly the background and you are providing melody, so it should be fine for you to have slightly different backing tracks each time. The progression won't change, and it's not playing melody or solos.
