Paul, you need this software. It will do everything you're asking about and more.
You're not a noob with some of this stuff, you have good ears and you know computers. Perfect. There's several true recording pros on this forum and a lot of us like me who are pro level players but not really pro level recording types. It also sounds like you can afford pretty much whatever you want so get the Everything Pak or Ultra Plus Pak, I get those confused, whichever one give you everything. Get the hard drive, PG gets those out quickly even to the UK. If your ears are really that good you might go for the Audiophile version but that is expensive and frankly most of us here including me can't hear any difference. Read that link Matt posted. Trust me, the regular version sounds superb.

Many thanks for all your replies, all of them read. I decided to buy the EverythingPak and in the process of downloading them all. 14 files left to download out of 61. Feel quite intimidated by the amount of files. My thinking is try this out whilst its at a good price, if I dont get on with it I can get my money back within 30 days or if I do get on with it but want the better audio quality I'll upgrade to Audiophile if thats possible. But Audiophile will be very expensive considering higher price point with no discount, post, import duty + future upgrades. I'll let you all know how it goes. I am the sort of person who asks lots of questions if you can put up with me
