Is it possible to record two tracks at once, one right and one left mono.
Do I select both tracks by holding down a CTRL key or something?

Go to the menu OPTIONS - PREFERENCES - AUDIO and look for the box labelled INPUT CHANNEL FOR MONO TRACKS. Set this to LEFT + RIGHT. A stereo signal will now be recorded on two separate mono tracks.

OK, to record two seperate tracks at once the LEFT & RIGHT channel selection must be made in Options/Preferences/Audio, but unless you activate both tracks in TRACK MODE you will end up with both audio inputs (ie. guiatr and voice) being consolidated on a single track.
Click the first track you intend to record to, then hold down the CTRL key and click the second track.
On my system track 1 is active 'red' and track 2 appears active when 'yellow.'

No, that's not right. Just select the first track and the second track will be recorded automatically.
You just need to make sure that on your stereo input, the guitar and voice are panned hard left and right.

You both missed a detail; you must be recording to a MONO track type.
Check the MONO input selection ROG recommended in his intial post.
Go the track you want to record on and right-click by the track name, and select 'mono audio' as the track type.
Hit record and keep take.
RB will record the left channel input on the selected track and put the right channel on the next available (blank) track.
I do not work here, but the benefits are still awesome
