When I lived in Philadelphia one of my teachers called these changes "We Want Cantor..." Its something to do with Eddie Cantor and I never heard anybody else call it that.

On these boards these changes are called "Rhythm Changes."

PS: I just Googled 'Cantor' and found a song called "Makin Whoopie" by Eddie Cantor that uses the basic I-vi-ii-V that Mick mentioned.
