I've got a number of different notation programs, but when I want to enter a score, I'll generally use Noteflight. It's a web-based application that you can try out for free. I like it because it matches the way I think about note entry, so I can quickly enter in music using my computer keyboard. If I want something more, I'll export the file as MusicXML and import it into another program for refinement. When I'm in the mood to use a mouse, BiaB is really speedy. But I'm just more comfortable typing.
