The best results will be obtained varying the cc#1 (modwheel) data. This can be recorded or drawn in the piano roll view as Mac pointed out. Also portamento (cc#20) and overlapped notes in combination with cc#64 are also important controllers for realism. The JABB documentation explains these and other midi parameters the instruments respond to.
