I tried using Audacity to record an audio stream. It recorded way too hot (all in the red) so the tracks were unusable. I see where the input slider is, but I'm confused about the input device options. Which should I select?

I don't know if this is an Audacity question (which I don't use) or a Windows mixer question. Can you bring up the mixer for whatever sound card you use for your audio, and adjust levels there?

@Scott, it's important to note, I'm running Win 7/64
@Matt, right-clicking on the speaker icon opens the mixer and, yes, I can adjust input levels but there are several shown. I only remember MME and a MS loop-back option. Would screenshot help?

Think I've spotted something - it's recording from the webcam mic, which explains why I'm recording my coughing and ambient room noise, but attempts to change the input device are grayed out.
Certainly, the little electret element would tend to record VERY hot.

Okay, on my older laptop running Vista, I have to use a jumper cable, one of those cables with a 1/8" male plug on both ends. One end of the jumper plugs into the headphone jack of the pc, the other end into the 'line-in' jack on the pc. Essentially as the audio is played back, it is then recorded by Audacity. Scott, you are describing a "Loop-back" device. Apparently, Win 7/64 provides that internally which I would have never known. If you have Win 7 (probably same in 32 or 64 bit) look for something like "MS Loop-back" in your sound-card mixer.

I didn't know this stuff either, Don. My old laptop with Audacity just doesn't have those options, but the cable worked like a charm...old school I guess:)
So now, I'll be able to record a SJ gig on that old laptop and tweak my sound setup. Cool.

Don, Just as a matter of clarity. Your MS Loop-back is probably a function of the audio chip driver, since I don't have that option in my Win 7/64 install. Of course, I also have three sound cards, and using my M-Audio 2496, I have the "M-Audio Monitor" which does exactly the same thing.
However, I'm glad you found it.

How's things in the most beautiful place I've ever known? I was just telling some cyber musician friends of the ferry ride where two Orcas paced us alongside and frolicked within 50 feet of us. Truly unforgettable!

Even though StreetJelly states you can't download a video, I just recorded a short screencast of someone named Lady Mellow as she performed this morning... well she still may be performing.
I am running a Linux distro, Mint 13, and I recently discovered desktop recording is built into the system using the included ffmpeg software. I can not only record audio from the web, but also any video I'm viewing.
I know most of you run windows, but perhaps you can find similar tools to record the video performances of those you enjoy hearing on StreetJelly without having to reroute the signals.
