I chose the second option you suggested: Opt., Preferences, Channels, etc. That worked pretty well. Of course it's a global preference so it applies to all songs but it's easy to change back if I need to.
Seems like I should be able to modify an existing patch with that information to create my own transposed instrument. I'll need to investigate that a little further.
