Yes RB can record more than 2 tracks. Up to 48 if the interface and system will support it. A few of us here use it for recording 8 to 16 tracks at once. No problem IF the inputs are selected in Audio Preferences and the interface is set up properly to deliver the signal. He said he selected all 8.
May be worth trying MME drivers and selecting all 8 inputs then recording once, this would be another test to see whether the system or the Scarlett setup is the cause.
I do not work here, but the benefits are still awesome
