I listened to the Bluegrass Waltz demo, and what might be confusing is that while it is a 3/4 time signature waltz, it could also be easily interpreted as a 6/8 time signature, especially as the dominant bass notes (highlighted) generally only play on the first beat of every odd bar number (every second bar), making it sound as though it could be playing in 6/8, especially at a tempo of around 140.
