Have you considered something like Myriad's software (Harmony Assistant - http://www.myriad-online.com), which can export midi entered data to .sty format? It sounds like that kind of a tool would be just your thing. I like your drag'n-drop idea though, it would be nice if we didn't need to look elsewhere for this sort of thing.
Just because you can, doesn't mean you should!
