Are you talking about a MIDI piano track that you create (by actually playing the keyboard), or an automatically generated piano track (based on a style)?

If the first, then just select an empty track and set it to be MIDI, set your channel and instrument patch and just record it.

If the second, then select a MIDI style that has a piano style you like, select an empty track and set it to be MIDI, then right click and select "Generate, Generate MIDI Track" and select the piano track you want.
