It used to be, if I remembered correctly, that all styles had to start with 4/4 time. Am I wrong on that?

My bad Matt, you are right. If you start in 3/4 time and later in the song change to 4/4/ time you stay in 3/4/ time though out the song. This is another of the time signature things that needs to be changed.

I apologize to all for the confusion.
