Unless you save the song using Alt-F2, or Save with Patches and Harmonies, Band In A Box will open the song each time with a General MIDI set of sounds.

Using the patch maps, the '.pat' files, as Matt states, will open a dialog box that will allow you to select a General MIDI sound from the drop down menu called 'Variation of', and then whatever variations are available to that sound. Depending on how Yamaha has organized the banks, selecting the Acoustic Grand Piano should give all the Grand pianos available below.

You may also select All Sounds from the drop down menu and all of your sounds will show up below, but that makes it kind of hard if you have 1,000 sounds and are looking for a tenor sax. It's easier to go to the Tenor Sax from the drop down, and then look for the variations.

Of course, if Yamaha has put that one special tenor you want with a program number that matches the acoustic bass, but in a different bank, then you're going to have problems finding it under variations of the General MIDI tenor.
