3) I tried the demo songs located in the "Artist Performance Sets" but even though it looks as if I can move the artist notes around using the Piano Roll view, it looks like my changes don't make a difference and the song sounds the same.
As mentioned, the notes you see have essentially been manually transcribed from the previously Recorded Audio. This is meant as an indicator to show you what was played, but in this case it is a one-way street, you can't alter the notes to change what was previously recorded. You can do this with notes on a MIDI track though, just not RealTracks. Welcome to the neighborhood.
