Probably the easiest path is a computer with something like Audacity. You can do as many takes as you need and burn the good one.
Start the laptop up, open Audacity.... click RECORD.... it doesn't get any easier than that.
Seriously, it's less work and hassle than loading a blank CD into the tray and pressing the record button on a dedicated machine.
He may not want to work with computers but he needs to come into the modern age. Once he sees how easy it is he'll wonder how he ever did it before.
